Grilled chicken and vegetables dish

Ingredients:

Procedure

Cut squash into 5mm slices. Halve zucchini, scrape out the seeds, halve again. Cut peppers into slices. Cut mango into managable pieces.

If you have a grill:

  1. Cut onions in quarters. Sear the chicken, squash, zucchini, onions, mango, and bell peppers. Then cut into smaller pieces.

If you only have a pan:

  1. Cut chicken into pieces. Cut zucchini into 10mm slices. Cut the onions into large pieces.
  2. Fry/sear/roast/grill on high heat.

Cut pepper, squash slices, and mango slices into smaller pieces.

Put into pot.

Add stock and tomato passata. Season with salt, pepper, basil, thyme, and sage.

Let simmer for 30 minutes.

Serve with rice or pasta.
